I decided to do another smoking experiment today. Last night I mixed up ground beef, cheese, and rub. Stuffed it into uncooked manicotti shells and then wrapped each shell with 2 slices of bacon. Let them sit overnight so the moisture helps to soften the shell. Then before I smoked them I sprinkled some BBQ rub on them. Then when they are ready, I put a BBQ sauce glaze on them. I invited Steve, Kathy, and Belinda to come try them. Steve is on his own for a few days. Everyone said they liked them. I attempted to adjust the cook time due to altitude and I think I overcooked them. I didn’t get too many pictures. I was too busy eating them. May have to try them again with Italian or breakfast sausage.
