Since I got the smoker I’ve been wanting to smoke a Boston Butt to have pulled pork for sandwiches and for a recipe. Last night I prepped the butt and since I work the early shift today, it was a great time to put the butt on the smoker. It went on at 09:00. It did not seem like it was cooking as fast as it should. It was only about 4 pounds. I had forgotten about the whole 5,300 feet above sea level thing. I pulled it off the smoker at 21:00 hours and it finally reached temperature at 22:45 hours. I pulled it from the oven and had to let it sit for 20 minutes before I could pull it. It was still good, tender, and moist. Very pleased.
